Apricot Leather

Grandma and Grandpa Capson brought a whole mess of apricots my way the other day and I am excited that today is finally the day to make apricot leather! Here is the recipe I like to use. Stop by later in the week if you want to try some. My kids LOVE it!

Apricot Leather
Preheat oven to 150 degrees

2 cups blended apricots
1 Tablespoon lemon juice
2 Tablespoons honey

Mix all in blender and pour onto cookie sheets. Bake in oven for 4-6 hours or until dry. Lay leather on plastic wrap and roll up. Store in fridge or freezer. 

You can also add nuts, seeds, coconut whatever else you can think of to the wet leather mixture. My kids are purists, so I have given up trying to impress them with my creativity.
