Ocean Ahoy!



I love going to the beach.


The ocean is so beautiful to watch and hear and smell. I love hanging out with the family, eating ice cream (Tillamook Brown Cow), reading, running at sea level so I feel like a super buff (as in tough not naked) mama, and getting away from life for a while. And a super bonus is church begins at 10am, making Sunday naps easier to achieve.


This is my little piece of Heaven.

Am I crazy to love my kids sooooo much?







It is okay if I am. I love them and thier personalities and their adorable juicy selves.

What's for Dinner

Here is what I made for dinner last night. This an oldie, but goodie in our family.

Chicken and Rice
1 tub sour cream (you can use light or fat free)
1 can cream of chicken soup (you can use low fat)
1/4 cup chicken broth (I use frozen)
4-5 chicken breasts
swiss or monterry jack cheese
dry stove top stuffing mix (I use chicken flavor)
ham slices (optional)

Place chicken in 9 x 13 pan. Layer ham and then cheese. In a sauce pan blend sour cream, broth and soup until bubbling, but careful not to let them burn. Pour soup mixture over chicken and sprinkle stuffing on top. Bake at 350 degrees for 45 minutes or until chicken in cooked through. I usually assemble this the night before or in the morning and place it in the fridge until I am ready to bake. You can also make this in a crockpot.
Serve over rice with sugar glazed carrotts and rolls.

Last week was crazy...I had baby AG on Tuesday and Thursday. Baby Bella on Thursday and my three ninjas everyday because it is STILL summer and they still live at home.

I also taught enrichment (see previous post) and I was in the middle of three back to back YW lessons. I know teaching should not stress me out so much, but it totally does. I always feel so immersed in my subject matter until I get up to teach and then it is like someone flushed a toilet in my brain and I can never remember what I wanted to say, but I somehow talk too fast and too long about stuff I cannot even remember saying afterward. It is like I go into a dream and wake up 30 minutes later with sweaty armpits serving as the only evidence I competed my task.

On Thursday I was in the middle of child rearing/baby sitting/bread making/house cleaning/Dew drinking, when I sprained my ankle and really wanted to cry. But with a house full of kids you can't cry so I pretended to swear (saying bad words in your head, and yes when you are a Mom "crap" and "shoot" are bad words!). And while that did not erase the pain I felt so much better for it.

Then on Saturday I was dropping off some groceries to my grandmother when Ludwieg the angry wiener dog from Hades jumped up and took a bite of my leg. THAT HURT! I had no idea how sharp and painful that experince could be. I guess no good deed can ever go unpunished!

All you Knead is Love


Okay, I have been blog absent lately because life has been so busy, but I just had some well deserved long over due "Mommy Time" with my favorite mommy gang members and I feel ready to conquer the world again; or at least blog for a while.

I had to teach the Relief Society Enrichment gals about bread last week and while I was quite nervous (I am a totally nerd I know) I think it went well and I actually had fun! No one really laughed at my jokes; which totally confirms my theory that I am the only one that thinks I am funny, but that is okay because now 25 more people in the world know how much I love bread and how all that yummy whole grain goodness is good for you too! YAY Bread!

Today I was watching my nephew Archie and preparing my lesson for Relief Society Enrichment tonight. As you can see Mia and Sam were on their best behavior 
and made my day a stress free one. 
At least now I know the crib tent works!

Here is an idea I picked up in Family Fun Magazine. I am making these for my Young Women, so they can write letters inside for their Dads. I am going to make a few extra for some of the other fine gents in my life too.

Trucks AND eggs? Sounds good to me!





I am not a person who enjoys weather extremes at either end of the hot/cold spectrum. I am however a little bit ready for some warm summer let your kids run in the sprinklers and eat popsicles until the puke weather. I don't want any 100 degree weather, but just some nice balmy high 80's low 90's would be perfect. Oh, and we need some sun to go with that lovely temperature too.

These pics are from a few (like 3) weeks ago when we had one of those most perfect days and played, played, played with the new slip n' slide and sprinkler ball of terror. I promise Princess C, we will have you over as soon as it gets warm!

Passing it Down


This is a stitchery project my Mother made for me right after I was born. I love how the pattern has a redheaded woman with a redheaded baby. My Mom said I would always walk up to her when she was working on it and point to the baby and say "baby, Lacy, baby". I know real articulate, but hey I was only one. 

When I was pregnant with Daniel my Mom gave this to me at my baby shower and even though I have seen it on her walls all of my life, I was overjoyed that she was actually passing this beautiful project she work so hard on to me. 

I have been looking for this same kit for a few years so I could make one for Mia and I finally found one (from 1977) on ebay! I love having the internet.

I do not know a thing about needle and thread crafts, so I will keep you posted as I try to learn and make this piece for my baby girl. Keep your fingers crossed for me.

Dave's Birthday Take Two


Tonight we are celebrating Dave's Birthday (again) with all of his family. I told him I was just going to serve the Rice Krispie treats (Dave and I both hate cake) I made for him yesterday in lieu of the traditional cake and ice cream fest. But, I am secretly making his ultimate favorite RazzleBerry Pie! 

If you have ever wondered why Dave is still so in love with me after 7.5 years of dating/marriage and 3 crazy kids (and our post three children reduced "adult time" life), it's THIS PIE!
  
RazzleBerry Pie   
1 bag frozen raspberries (fresh when in season) 
1 bag frozen blackberries 
2/3 cup sugar (more if you like sweeter pie) 
4 TBSP flour (more if berries and juice look thin)   

Thaw fruit almost completely and drain juice through colander.  In a large bowl mix fruit, sugar and flour together and pour over bottom crust in pie dish.  Add top crust and pinch together. Brush top crust with egg and sprinkle with sugar   Cover edges with foil or pie crust protector.   Bake for 30 minute at 400 degrees remove foil and bake additional 10 minutes until crust is brown                         

Pie Crust   
2 cups flour 
1 tsp salt 
½ cup chilled butter 
1/3 cup frozen shortening 
1/3 cup sugar 
1 large egg beaten 
1 tsp white vinegar 
2 tbs ice water   

Combine flour and salt, cut in butter and shortening. Stir in sugar, egg and vinegar. Mix in just enough ice water.   Chill for 4 hours in plastic wrap or freezer for ½ hour. Split dough in half and place one half back in fridge. Roll out one half of dough and place in pie dish. Quickly add filling and then roll our top crust and place on top of pie. Brush top of pie with 1 egg beaten with 2tbs water and sprinkle with sugar. I like to use large grain sugar you can purchase at Spoons n' Spice or from The Bakers Catalog.

Roll out top crust and fold in half and cut a half circle vent in center

Pie straight from the oven! It's not the prettiest pie ever, but it tastes divine! 
Serve it with vanilla ice cream or whipped cream and you have a winner.

Slowing Down...Slowly

I took a really interesting class last night through Continuing Education's Lifelong Learning Program. It was called "Eating Local-Slow Food". It was a simple class that only lasted two hours, but it was really informative and gave me A LOT to think about. I have always been pretty conscientious about what food I give my family in regards to sugars, fats, trans fats and 
partially hydrogenated anything, or other crap I cannot pronounce (except for my Jif, please oh please do not take my PB&H sammys away from me. Oh and fruit snacks because a Mom needs some leverage). BUT I have been dubious about the benefits of organic foods vs. the sky high prices these chemical free gems tote and I hate myself for saying (okay writing) this, but I like Walmart. I know I said it "My name is Lacy and I am a Walmart liker-aholic" so now you can all boo me and my trying to feed my ever growing family on a VERY tight budget hypocritical self.

So back to the class. It really made me think "what am I putting into my babies precious little bodies?". I try, but is it enough? So, I think I am going to start small and slow, but try to really truly integrate better and healthier eating practices for the Egbert-Meikle crew. I am scared of the expense, but I read part of a study in conjunction with the class that said in the 1930's Americans spent over 30% of their income on food and in 2007 it was less than 10%. I know the 30's were harder economic times (maybe not for long), but I am beginning to wonder if I can make some more sacrifices in the budget in order to help give my kids some better/healthier food choices. So, maybe the beloved fruity snacks from Costco will have to bite the dust and I will be void of my ultimate "do it now or no fruit snacks" threat.

I also like the eating local angle too, especially since some of the local farms I have found to buy shares from are related to either Dave or myself (who knew!) and I like supporting more community based initiatives. Keeping our money close to home, so more people can benefit from single family run farms like both of Dave's Grandfathers and my beloved Grandpa Monson. 

I do know that I will NEVER EVER EVER be able to live without two non-local loves of mine: olive oil and my beloved peanut butter, but hey no one is perfect, even the great lady who taught the class and leads Slow Food Utah said she buys pineapple and bananas. Phew, because a world without olive oil and peanut butter is not a world in which I was meant to live.

I think this will be an interesting family experiment, but hey, we have been slowly going more "green" each week and it has worked so far and really not been as painful as we thought (when I say we I mean Republican Dave). Oh, and a great green tip: Costco not has all their fluorescent light bulbs $5 off thanks to a Rocky Mountain Power instant rebate. I purchased 10 60W's for $5.74 on Saturday.

Just Dreamin'



One of my most favorite things to do online is dream shop. Not necessarily buy, in fact, I rarely buy, but I love to dream shop and keep ideas for things that I would love to have/buy if money and space were not an issue. 
Who doesn't have those issues? If you don't will you call me and let me shop, browse and live vicariously through you?
In the meantime you can find me online happily dreaming and planning my dream house and purchasing its contents.

So Sad!

I just heard on the news that Barack Obama has secured enough delegates to win the 2008 Democratic nomination for President of the United States. Hillary Clinton is withdrawing from the race tonight. I am sad because I truly believe she is a good person and a woman that would have had the knowledge and leadership skills to help our ailing country.
