This is one of my favorites, I am always finding reasons to make it!
Dressing:
1 cup oil
1/2 cup white vinegar
3/4 cup sugar
1 tsp salt (I don't use quite this much)
1 tsp dry mustard
1 TBS poppy seeds
1 sm red onion, sliced thin (just a bit in dressing and toss the rest of onion in salad)
Combine ingredients oil through mustard in a blender until well blended. Then stir in poppy seeds and onion. Marinate dressing over night. Toss with salad fixings right before serving.
Salad:
Spinach (I use 1 or 2 small bags)
1 head lettuce (Romaine) - chopped
8 oz mozzarella or Swiss cheese, grated
1/4-1/2 lb bacon, crumbled
1 cup cottage cheese
8 oz sliced mushrooms
1 cup craisins or apples
3-4 chopped boiled eggs
You can make more or less depending how many you want to serve. You could also add almonds and avocado. I have also been wanting to try dried blueberries instead of craisins. This salad is perfect with grilled chicken and rolls.

I loved this salad! I am loving your blog for all of the yummy recipes, little miss homemaker! Now can I get your roll recipe? Or not, since I ate I don't know how many last night! Hee hee!
