Splish Splash

Little Miss C gave Daniel a Go Diego Go Slip and Slide for his birthday in April. Every day since April 19th Daniel has been begging and pleading with Dave and me to set up the slide. Since it has been too cold and rainy and cold and rainy this has been a very painful wait. But FINALLY the glorious sun came out to warm up the earth one great day and Daniel was able to enjoy some slip and slide fun.

Then everyone went inside for hot tubbies and hot chocolate!

Jennie-O's Aunt Lee's Pasta Salad

Here is a fun recipe I stole from Jennie-O's blog. Since all of my blog readers don't know cute Jennie-O, I wanted to share this surprising salad here too.

My Uncle Brant just returned from his second tour in Iraq and I am taking this to his welcome home party this Sunday.

ORANGE BROCCOLI FETTUCCINE SALAD

1 LB. BROCCOLI FLORETS (blanch or steam over pasta water for 3-4 minutes)
2 (4 OZ) CANS ARTICHOKE HEARTS CUT IN HALF (I bought them already quartered)
1 (6 OZ) CAN SMALL PITTED OLIVES (buy the pre-sliced olives)
2 (11 OZ) CANS MANDARIN ORANGES
1 1/2 C SMOKED TURKEY CUT IN THIN STRIPS (I used a Jenny-O breast and cut it into small pieces)
1 RED ONION THINLY SLICED
1 (9 OZ) PKG. FRESH FETTUCCINE (cut in half before boiling)
1/3 C GRATED ASIAGO CHEESE

CUT BROCCOLI INTO BITE SIZE PIECES AND PLACE IN LARGE BOWL. DRAIN OLIVES AND ARTICHOKE HEARTS AND ADD TO BOWL. ADD RED ONION AND SLICED TURKEY. TOSS LIGHTLY. COOK FETTUCCINE ACCORDING TO PACKAGE DIRECTIONS AND RINSE IN COLD WATER. ADD TO BOWL. TOSS ALL WITH THE DRESSING. ADD ORANGES (AND STRAWBERRIES) LAST AND TOP WITH THE ASIAGO CHEESE.

DRESSING:
½ C EXTRA LIGHT OLIVE OIL
¼ C LEMON JUICE
1 TSP. GRATED LEMON RIND
1 ½ TSP. SALT
½ TSP. GROUND PEPPER
2 GARLIC CLOVES MINCED
1 T. POPPY SEEDS (Penzeys has the best Blue Holland poppy seeds)

MIX ALL INGREDIENTS EXCEPT THE OLIVE OIL. WHISK IN THE OIL SLOWLY.

*SOMETIMES I ADD SPINACH OR ROMAIN OR STRAWBERRIES. (strawberries are a MUST)

Jackson 5

Last weekend Dave and I went to Jackson Hole with our friends "Fred" and "Wilma" and their daughter "Pebbles". Did I mention it was also our 6th wedding anniversary? It was a nice quick get away, even though it rained the entire time and when it rains in Jackson it is super cloudy too. Thanks to the storm and clouds, I never got to see the Tetons despite spending over 7 hours in the Grand Teton National Park on Saturday. Maybe next time.

Happy Anniversary

Dave and I celebrated our 6th anniversary on today! Since we were out of town on the actual date we celebrated a week earlier. Dave took me to Mazza, my third favorite restaurant, and one of his least favorites, so I now know he really loves me (smile)! When I got into the car to leave there was a little red box waiting for me on my seat. Knowing that "red" boxes mean Dave purchased my present from Red Envelope I was immediate excited and knew I would totally LOVE the contents inside. I was so excited (and so were the kids) that I opened the box right then and there before we got to dinner and before the kids were dropped off to Dave's Mom. Inside was the perfect necklace with three small diamonds (one for each of our little angels). I loved it! Not as much as I love Dave, but I loved it still.

Thank you "Sweetass-Meik-casso" for six wonderful years of love, laughter and for my three naughty little angels. We have survived a lot in our first six years and I am so grateful to have married you and hitched my star to yours. We have an amazing life and I love you!
